  6. Get 3 tsp salt
  7. Prepare Spices:zaatar herb 2 tspn,red chilli flakes 2 teaspoon
  8. Get Spice :mustard seeds 1 teaspoon,fenugreek seeds 2 teaspoons,
  9. Make ready Spices:fennel seeds 1 teaspoon(optional)

So, don't think about boiled carrots, but instead imagine a whole new taste sensation. Buy yourself some large carrots and peel them. Slice on the diagonal into quarter inch slices and do the same to a few large jalapeño peppers. Be careful with those peppers and be sure to wash your hands thoroughly after working with them.

Medium to large carrots..peeled and sliced slant shaped through the width first then sliced length wise into thinner slices about 3 times…then slice those into slanting shorter pieces(see pic)this is important due to ensure carrots absorb flavors while cooking and cook quicker to make them soft
  3. Prep the tomatoes: half them,devote and slice then chop as fine as possible
  4. Prince corriander in collander and let drain in there..then finally or roughly chop
  5. You can use long green chillies if you prefer.you start heating up your oil in pan.then can add 4 green chillies until they start popping…if not using green chillies you can go straight to adding choped tomatoes and spices.simmer until tomatoes broken down to more pasty consistancy
  6. Add carrots,vinegar and little water
  7. Simmer till carrots start softening.about 4 mins then add more oil.let carrots cook in a bit more until tender..taste for spice/salt can add as more as required.(optional you can add a bit of lime juice or lemon zest..gives this a gr8 flavor)
  8. Add the pickled pepper pieces then cover and simmer about 2 mins until you can see oil at edges and the mixture has a bit of sauce but not liquidy.add the coriander
  9. Put in your serving dish decorate with chillies and corriander and sliced lime..serve with favoured dishes..bismillah and enjoy!
